tomato, bocconcini & basil salad
Preparation: 10 minutes
Serves: 6
6 vine-ripened tomatoes
6 medium bocconcini
6 basil leaves, shredded
sea salt and black pepper
extra virgin olive oil to serve
balsamic vinegar to serve
1 Using a sharp knife, make 4 incisions in each tomato, cutting three-quarters of the way through.
2 Slice each bocconcini into 4 and place a slice in each tomato incision.
3 To serve, place the tomatoes on to a platter with a dipping bowl containing the combined oil and vinegar. Season generously with salt and pepper and garnish with the shredded basil leaves.
