recipe for passionfruit pudding

|
I was wondering if you can send me a recipe from your mag which appears a while ago for passionfruit cupcakes. I loved it so much and accidently threw it away. |

Unfortunately, we haven't featured a passionfruit cupcakes recipe. We did, however, run a recipe for passionfruit pudding. Here it is:
Preparation 15 minutes Cooking 25 minutes Makes 6
• 75g butter, softened • 1 cup (220g) caster sugar • 3 eggs, separated • 100ml passionfruit pulp • 1/3 cup (60g) plain flour • 1 tsp baking powder • 2/3 cup (185ml) milk • icing sugar for dusting • double cream to serve • extra passionfruit to serve
1 Preheat the oven to 160°C. Using an electric mixer, beat the butter and sugar until pale and creamy. Add the egg yolks, one at a time, beating well after each addition. Stir in the passionfruit pulp. 2 Sift in the flour and baking powder and stir to combine with the milk. In a separate bowl, whisk the egg whites until stiff, then gently fold into the passionfruit mixture. 3 Divide the mixture evenly between 6 x ¾-cup-capacity ramekins and bake for 25 minutes or until the puddings have risen and are lightly golden. 4 To serve, dust with icing sugar and serve with double cream and the extra passionfruit pulp.

Limit your intake of fresh fruit juice, which is extremely high in sugar. A much better bet is to have a whole fruit - this way you get the fibre that a juicer takes out. Download your month 1 progress chart
