recipe: wasabi crab salad cups

Preparation 15 minutes
Makes 12

2 witlof or baby cos
2 tbsp whole-egg mayonnaise
1 ½ tsp wasabi paste
1 tbsp lime juice
300g dressed crab meat
1 ½ tbsp finely chopped chives
1 celery stalk, finely sliced
Sea salt and ground white pepper, to taste
50g salmon caviar or roe

1 Cut the bottom off the witlof, remove the 2 outer leaves and discard. Pull the next 6 leaves from each whitlof and place in a large bowl of iced water.
2 Place the mayonnaise, wasabi paste and lime juice in a mixing bowl and whisk to combine.
3 Stir through the crab, chives and celery, and season with salt and pepper.
4 Drain the leaves and dry on a clean tea towel. Place on a serving platter and fill with the crab mixture.
5 Top each with a little of the salmon caviar and serve.

Tip: If you can’t find fresh crab meat, use the frozen variety. Simply thaw and drain well.
