recipe: baked double brie with lemon thyme and chives

Preparation 10 minutes
Cooking 35 minutes
Serves 6

200g round double brie in a box
6 sprigs lemon thyme
12 chives, trimmed and halved
1 tbsp white wine
1 tsp olive oil
Crusty bread, to serve

1 Preheat the oven to 200ºC (180ºC fan-forced). Remove any stickers from the box and unwrap the cheese.
2 Place half the thyme sprigs and chives in the base of the box and place the brie on top. Stab and twist a knife 8 times around the top of the brie and pour the white wine into the holes.
3 Place the remaining thyme sprigs and chives on top of the brie, drizzle with the olive oil and replace the lid of the box. Wrap in foil.
4 Bake for 35 minutes until oozy and molten.
5 Remove the lid and side of the box. Serve with crusty bread.

TIP: If you can't get brie in a wooden box, simply use aluminium foil to create a makeshift tin around the cheese. Crimp the foil at the edges to leave the top open.
