buttermilk pancakes with maple butter
Preparation: 15 minutes
Cooking: 20 minutes
Serves: 4
2 cups (290g) plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
3 tbsp caster sugar
pinch of salt
2 large eggs
2 cups (500ml) buttermilk
50g butter, melted
extra butter for cooking
4 sugar bananas, sliced, to serve
Maple Butter
250g butter, softened
4 tbsp maple syrup
1 To make the maple butter, place the butter and maple syrup into a bowl and mix to combine. Transfer to a sheet of plastic wrap and shape into a log, roll up and seal the ends to secure. Place into the freezer until needed.
2 Sift the flour, baking powder, bicarbonate of soda, sugar and salt into a large bowl. Add the eggs, buttermilk and butter, and whisk until just combined.
3 Heat a non-stick frying pan over medium heat and grease with a little butter. Pour ¼ cup of pancake batter into the pan and cook until bubbles appear on the surface, turn and continue cooking until golden. Repeat until you have 12 pancakes.
4 Serve the pancakes with banana and a few slices of maple butter.
